Domaine Moreau-Naudet Chablis 1er Cru Forêts, in magnum, comes from a historic sub-plot of Montmains that the late Stéphane Moreau called one of the greatest terroirs of Chablis.

Forêts is a named climat within the Montmains premier cru, on the left bank of the Serein and high up the slope with a south-easterly aspect. Its reputation rests on the growers who work it, Dauvissat and Raveneau among them, and Moreau-Naudet farms two plots totalling just under two hectares. The first hugs Vincent Dauvissat's parcel and shares its 60-year vine age; the second, planted about 25 years ago, sits beside the Raveneau holding. The soil is the Kimmeridgian marl and limestone that gives Chablis its saline cut. As with the other premier cru wines from this address, the fruit fermented and aged in a combination of steel tank and used barrels of various sizes, around 30% of the volume in wood, and maturation now extends to two years before bottling. The magnum format slows development further.

Worth two or three years in bottle and capable of a decade or more, especially in this size. Serve at 10-12°C with oysters, grilled snapper or roast chicken.
