Description
Forêts is a historic sub-plot within the Premier Cru Montmains, high on the slope and facing southeast, which the late Stéphane Moreau called one of the greatest terroirs of Chablis.
Montmains sits on the left bank of the Serein, and Forêts occupies its upper reaches, where thin soils over Kimmeridgian limestone give tightly wound wines. Dauvissat and Raveneau both hold parcels here, which says most of what needs saying about the site. Moreau-Naudet farms two plots totalling just under two hectares: the first adjoins Vincent Dauvissat's vines and shares their 60 years of age, the second, planted 25 years ago, sits beside the Raveneau parcel. As with the domaine's other Premiers Crus, fermentation and ageing take place in a mixture of stainless steel and used barrels, about 30% of the blend, in a range of sizes. Maturation now extends to two years before bottling.
Worth cellaring five to ten years. Serve at 10 to 12°C with oysters, roast fish or a soft goat's cheese.
