Description
Montée de Tonnerre is generally reckoned the finest of the Chablis Premiers Crus, and this wine comes from a hectare in its Chapelot sector.
The vineyard lies on the Right Bank, on the same slope that carries the Grands Crus, with a sandy, rocky topsoil rich in Kimmeridgian limestone. The parcel that makes this wine sits within the lieu-dit of Chapelot, separated from the Grand Cru Blanchot only by a narrow ravine, which explains a good deal about its concentration. It covers two contiguous plots, one of fifty-year-old vines and a second replanted more recently. Domaine Moreau-Naudet, now run by Virginie Moreau at Chablis, works with low yields and long, unhurried élevage, keeping oak influence minimal so that the mineral, earthy character of the site is not obscured. The wine is layered and rocky in a way that separates the Right Bank crus from the cooler sites across the valley.
Give it two to ten years; serve at 10–12°C with oysters, roast white fish or a hard cheese.
