Domaine Moreau-Naudet Chablis 1er Cru Montmains 1.5L MAGNUM 2021

Domaine Moreau-Naudet Chablis 1er Cru Montmains is drawn from 0.65 hectares of vines averaging seventy years of age, across three lieux-dits on the left bank of the Serein.

Montmains lies on the opposite flank of the Valvan valley to Vaillons, on deep bleu d'argile, a blue clay studded with limestone rocks. It is a premier cru that tends to give a textbook Chablis of drive and minerality rather than breadth. The Moreau-Naudet holding is spread across Les Monts Mains, Les Bouts des Butteaux and Vaux Miolot; the last of these, on deeper and clayier ground, is difficult to work but contributes flesh and texture to the blend. An average vine age of around seventy years keeps yields naturally low. The domaine farms without herbicide, picks by hand and ferments on indigenous yeasts, and this cuvée was vinified and aged entirely in stainless steel with no oak, so the site rather than the cellar sets the terms.

In magnum, expect it to unwind slowly over eight to ten years. Serve at 10-12°C with oysters, kingfish crudo or grilled flathead.
