Domaine Moreau-Naudet Chablis 1er Cru Vaillons 1.5L MAGNUM 2023

Domaine Moreau-Naudet Chablis 1er Cru Vaillons, in magnum, is blended from three lieux-dits within one of the best-regarded premier crus on the left bank of the Serein.

Vaillons sits mid-slope across the river from the grand cru hill, well positioned and long admired thanks to the work of a handful of committed growers. Moreau-Naudet draws on vines planted in 1974 in Les Epinottes, a cooler pocket of the vineyard, and in Roncières, which brings more flesh, while a parcel of 75-year-old vines in Sécher usually makes up about 30% of the blend and supplies mineral cut and structure. Each parcel is picked and vinified separately before the final assembly. Fermentation and ageing take place in both stainless tank and older barrels, including some 600-litre casks, so the oak works on texture rather than flavour. The Kimmeridgian soils and the long, unhurried maturation give the wine the salty depth associated with this domaine.

Drinking well from two or three years and holding for a decade in magnum. Serve at 10-12°C with scallops, ocean trout or a soft washed-rind cheese.
