Description
Domaine Moreau-Naudet Chablis 1er Cru Vaillons is blended from three lieux-dits, including a parcel of seventy-five-year-old vines in Sécher that makes up about a third of the wine.
Vaillons occupies the middle of the slope on the left bank of the Serein, facing the grand crus across the river, and its standing rests on the work of a handful of growers over several decades. Moreau-Naudet farms vines planted in 1974 in Les Epinottes, a cooler corner of the vineyard, and in Roncières, which gives more flesh. The old Sécher parcel usually accounts for around thirty per cent of the blend and supplies mineral cut and structure. Each parcel is vinified separately before assembly, with fermentation and ageing split between stainless steel tank and older barrels. The house style favours long élevage and restraint over early charm, and this is a Vaillons that gains from a few years in bottle.
Best from a year or two after release and through the following eight. Serve at 10-12°C with grilled scallops, roast chicken or a gruyère tart.
