Domaine Moreau-Naudet's Chablis 1er Cru Vaillons is blended from three lieux-dits on the left bank of the Serein, including a parcel of 75-year-old vines in Sécher.
Vaillons sits mid-slope on the left bank, facing the grand cru hill across the river, and is among the best-regarded premiers crus in Chablis, a reputation built by a handful of committed growers. Moreau-Naudet works vines planted in 1974 in Les Epinottes, a cooler corner of the vineyard, and in Roncières, which gives more flesh. The Sécher parcel, at around 75 years old, usually accounts for about 30 per cent of the blend and supplies the mineral cut and the structure. Kimmeridgian marl underpins all of it. Each parcel was vinified separately before assembly, with fermentation and ageing split between tank and older barrels, so there is no new-oak signature over the top. The bottling is sealed under Diam. The result is dense and deep without losing the energy the appellation is known for, and the finish runs long.
It will drink well from about two years and hold for a decade. Serve with oysters, roast chicken or a goat's cheese tart at 10–12°C.
