Description
Vaillons is a well-sited Premier Cru on the mid-slope of the left bank of the Serein, and Moreau-Naudet blends three of its lieux-dits.
Vaillons enjoys a strong reputation thanks to the growers who have worked it over the years, and the vineyard is large enough that the choice of lieu-dit matters. The domaine farms vines planted in 1974 in Les Epinottes, a cooler section, and in Roncières, which gives more flesh, while a parcel of 75-year-old vines in Sécher usually accounts for around 30% of the blend and supplies mineral cut and structure. Each parcel is fermented separately before assemblage, in a combination of stainless steel tank and older barrels including some 600-litre casks, so the wine picks up texture without oak flavour. Moreau-Naudet is now one of the most followed domaines in Chablis for this restrained, long-aged approach.
Drink from now through the next eight years, with shellfish, roast chicken or comté, at 10 to 12°C.
