Domaine Moreau-Naudet Chablis 2020

Domaine Moreau-Naudet's village Chablis is assembled from some thirty parcels across the appellation and given an unusually long twenty months on lees.

Chablis lies well north of the Côte d'Or, on Kimmeridgian marl laid down in a shallow sea, and its Chardonnay is defined by cool ripening and saline cut rather than by oak. Moreau-Naudet draws the bulk of this wine from twenty to thirty-year-old vines at Préhy and Courgis in the south of the appellation, with further parcels at Chablis itself and at Chichée, below the premier crus of Vaugiraut and Vosgros. Working across thirty parcels gives a spread of soils and exposures. Fruit from the youngest vines is sold off in bulk, which lifts the standard of what remains. The grapes are hand-harvested, pressed very gently over about four hours, and fermented with indigenous yeasts, still a rarity in the district. Élevage is mostly in tank but unhurried, the wine spending twenty months on lees before bottling.

Drinking well now and worth keeping three to five years. Serve at 10-12°C with oysters, grilled flathead or a simple goat's cheese.
