Domaine Moreau-Naudet Chablis 2021

Domaine Moreau-Naudet Chablis is a village wine assembled from parcels scattered right across the appellation.

The bulk comes from 20- to 30-year-old vineyards at Préhy and Courgis, south of Chablis, with further parcels in Chablis itself and in Chichée below the premier cru vines of Vaugiraut and Vosgros. All up the domaine works about 30 parcels, covering a range of soil structures and exposures, and the fruit from its youngest vines is sold off in bulk rather than bottled here. Picking ran over several dates according to the ripeness of each plot. The fruit was given a gentle four-hour press and fermented with natural yeasts, still uncommon in Chablis. Maturation was largely in tank, with a small barrel component, and the wine spent 20 months on lees, considerably longer than most Chablis at this level. Hand-harvesting, low yields and that long lees ageing explain the texture behind the freshness.

Drinking now and worth five to eight years in the cellar. Serve at 10-12°C with oysters, grilled prawns or a simple roast chicken.
