Domaine Moreau-Naudet Chablis Grand Cru Valmur 2019

Valmur is the smallest of Moreau-Naudet's holdings, a little over half a hectare in the fold of the grand cru hillside between Vaudésir and Les Clos.

The vineyard occupies a small combe that opens to the south-west, with vines on both of its flanks, so the fruit ripens fully while the Kimmeridgian limestone beneath keeps the acidity taut; it is generally counted among the broader and more structured of the seven grand cru climats. The domaine took its present form in 1950 with the marriage of Marie Naudet and René Moreau. Stéphane Moreau took over from his father Roger in 1993 and grew the estate from seven hectares to around twenty-five, building a new cellar, before his death in 2016 at forty-seven; his widow Virginie now directs it with the cellar team and their daughter Nelle. Farming is organic, the soils ploughed four or five times a year, and picking is by hand. Fermentation is with indigenous yeasts, and the wine spends eighteen to twenty-two months on its lees, about a third of it in barrels that are steamed rather than toasted and never new, the rest in tank, with sulphur kept low.

A grand cru that needs three to five years and will hold well beyond that; serve at 10-12°C with lobster, roast chicken or aged Comté.
