Domaine Moreau-Naudet Chablis Grand Cru Valmur 2021

Domaine Moreau-Naudet Chablis Grand Cru Valmur comes from a 0.6-hectare parcel planted in 1978 and worked by horse, on the cooler, more shaded side of the Valmur combe.

Valmur covers roughly twelve hectares in the middle of the Chablis grand cru slope, forming a small valley wedged between Vaudésir and Grenouilles on one side and Les Clos on the other. The enclosed shape of the site makes it very cold in winter and hotter than average in summer, and its wines have a reputation for authority and depth rather than delicacy. The Moreau-Naudet parcel neighbours the vines of Raveneau and faces into the shadier part of the combe, so it ripens more slowly. That, with the steepness of the slope and the Kimmeridgian limestone beneath, accounts for the saline, mineral imprint that runs through the wine's texture. The domaine works from the town of Chablis, ploughs this plot by horse and picks by hand. This cuvée was fermented and raised with no oak at all, in three stainless steel tanks.

Worth cellaring five to ten years, though it is not closed on release. Serve at 10-12°C with roast turbot, lobster or aged Comté.
