Description
Valmur is the Grand Cru at the heart of the Chablis slope, and Moreau-Naudet's parcel there is now vinified entirely without oak.
The Valmur vineyard covers around twelve hectares and forms a small valley in the middle of the Grand Cru hillside, wedged between Vaudésir and Grenouilles on one side and Les Clos on the other. It runs colder than average in winter and hotter in summer, which is generally held to explain the authority and depth of its wines. Moreau-Naudet farms a 0.6-hectare plot planted in 1978 and worked by horse, next door to the vines of Raveneau; the domaine's section is cooler and more shaded, and combined with the steepness of the slope this gives the wine its strong mineral, saline imprint. The Kimmeridgian marl beneath is the same limestone and fossil shell that defines the appellation. Vinification now takes place in small stainless-steel barrels rather than wood.
Rewarding five to fifteen years in bottle. Serve at 10 to 12°C with oysters, roast turbot or a plate of raw scallops.
