Description
Moreau-Naudet's Petit Chablis comes from a single site at Beine planted on Kimmeridgian soil rather than the higher Portlandian ground on which most Petit Chablis is grown.
Petit Chablis sits at the base of the Chablis hierarchy and usually occupies the flatter, later-formed Portlandian limestone above the slopes that carry the village and premier cru vineyards. This bottling is an exception. It comes from one 2.5-hectare parcel at Beine, just outside Chablis on the road to Auxerre, facing south-west and rooted in Kimmeridgian soil. Half the plot carries vines of twenty-five to thirty years, the remainder vines of forty-five to fifty. Fermentation is natural, and the wine is vinified in large vats ranging from thirty-two to one hundred hectolitres, so there is no oak character to speak of. The result has more depth and grip than the appellation usually delivers. It is sealed under Diam.
Ready on release and best over the next two to three years. Serve at 10-12°C with freshly shucked oysters, whitebait or a green salad with goat's cheese.
