Domaine Moreau-Naudet Petit Chablis 2021

Domaine Moreau-Naudet Petit Chablis comes from a single site on Kimmeridgian soil, which is unusual for the appellation.

Petit Chablis normally sits on the higher Portlandian limestone that caps the plateau above the Kimmeridgian slopes, and it is generally the lightest wine of the district. Moreau-Naudet's 2.5-hectare parcel at Beine, just outside Chablis on the road towards Auxerre, is an exception: it faces southwest and lies on Kimmeridgian soils, the same seam that runs beneath the village and premier cru vineyards. Half the plot carries vines of 25 to 30 years, the other half vines of 45 to 50 years. The wine is fermented naturally and vinified in large vats of 32 to 100 hectolitres, with no oak involved, so the site and the fruit are what you taste. The result has more substance and grip than the classification usually suggests.

Best drunk over the next three to four years. Serve at 10-12°C with fresh oysters, salt and pepper squid or a green salad with goat's cheese.
