Description
Domaine Naturaliste Sauvage Sauvignon Blanc is a fuller, barrel-influenced Margaret River white made with wild yeasts.
The name comes from wild fermentation. Most Australian Sauvignon Blanc is fermented in tank for a crisp style; this one uses indigenous yeasts and spends time in oak, much like white Bordeaux, for extra texture and complexity. Bruce Dukes, the man behind it, trained in California and has made plenty of wine for other local estates as well.
Fuller and more layered than most Sauvignon Blanc, with fresh acidity. Take it out of the fridge a little early and serve at 9–11°C with goat's cheese, grilled fish or chicken dishes.
