Description

Domaine Paul Pillot's Bourgogne Rouge is drawn from two estate-owned parcels in the southern reaches of Chassagne-Montrachet, near Chagny and Remigny.

The Bourgogne appellation covers the whole region, so the address of the vines and the hand that tends them matter more than the label. Pillot is a Chassagne domaine best known for its whites, and Thierry Pillot has built a following for reds made with the same care. The two sites sit on the classic clay and limestone of the Côte, with vines averaging 35 years of age. Fruit is hand-picked and mostly destemmed, though roughly 20 to 30 per cent whole bunches are retained for structure and perfume, an unusual proportion at this level. Fermentation runs on indigenous yeasts, and the wine spends 12 months on lees in a mix of steel vats and used large barrels, so oak stays firmly in the background.

Approachable on release and good for around five years; serve at 16-18°C with charcuterie, roast duck or mushroom dishes.
