Description

Domaine Paul Pillot Bourgogne Rouge is drawn from two estate-owned sites in the southern reaches of Chassagne-Montrachet, near Chagny and Remigny.

Regional Bourgogne Rouge covers a great deal of ground and a great range of quality, so the address of the vines matters. Paul Pillot is a Chassagne-Montrachet domaine, best known for white wine, and these two parcels sit on the classic clay and limestone of the Côte with an average vine age of 35 years. The grapes were hand-picked and mostly de-stemmed, then fermented on indigenous yeasts and aged for 12 months on lees in a mix of steel vats and used large barrels, so there is no new-oak influence. For structure and perfume, Thierry Pillot uses roughly 20 to 30 per cent whole bunches, a surprising proportion at this level and one that lifts the aromatics without weighing down a wine whose appeal is finesse and purity.

Ready now and holding comfortably for five years. Serve at 16-18°C with roast chicken, charcuterie or mushrooms on toast.
