Description

Domaine Paul Pillot Bourgogne Rouge is made with roughly half whole bunches, an unusual choice at regional level.

Paul Pillot is based in Chassagne-Montrachet and is best known for white wine, but the estate holds red parcels in the southern reaches of the commune, towards Chagny and Remigny. The soils there are the clay and limestone found throughout the Côte, and the vines average 35 years. The fruit is handpicked and mostly destemmed before a natural fermentation, with about 50 per cent of bunches retained whole for structure and perfume. Maturation runs twelve months in a mix of steel vats and large used barrels, so there is no new oak in the wine. It is a deeper and fleshier Bourgogne than the category usually delivers, and the whole-bunch component gives it a lift that carries through the finish.

Ready now and drinking well for four to six years. Serve at 16°C with roast chicken, pork sausages or a mushroom risotto.
