The Pillot family's parcel in the premier cru Clos Saint-Jean sits inside the original walled clos, a short walk from the domaine's cellars.
Clos Saint-Jean is one of the larger premiers crus of Chassagne-Montrachet, planted to both Chardonnay and Pinot Noir, and it lies immediately beside the village. The estate's holding is in the heart of the original enclosure, where stone walls still ring the vines. Soils here are rich in clay and the oldest vines are now more than eighty years of age, a combination that gives the whites noticeable texture and depth rather than pure raciness. Fruit is hand-picked and whole-bunch pressed, fermented with indigenous yeasts and aged on lees in barrel with only a small share of new wood. The result is a beautifully pitched, layered white Burgundy, rocky and savoury, that drives across the palate.
Approachable after two or three years and worth keeping for eight or more; serve at 10-12°C with roast pork, richer fish dishes or Comté.
