Domaine Paul Pillot Chassagne-Montrachet 1er Cru Clos Saint-Jean 2022

Clos Saint-Jean is one of the larger premiers crus of Chassagne-Montrachet and is planted to both colours, as much of the commune once was; being on the doorstep of the winery, the vines get a good deal of hand work. The domaine goes back to the mid-nineteenth century and Jean-Baptiste Pillot, a barrel-maker who turned to vines, and it was Paul Pillot who assembled the premier cru holdings after taking over in 1968. Thierry Pillot joined in 1999 and took full charge in 2007, running the thirteen-hectare estate with his sister Chrystelle. Farming is organic in practice though uncertified. From 2011 Thierry lengthened the élevage and pulled back the wood: the whites now spend around eighteen months on their lees in barrels of 350 to 500 litres, only a small proportion of them new, followed by six months in stainless steel before bottling. The larger casks are a deliberate compromise between air and oak flavour.

Drinking from two years and good for eight; serve at 10-12°C with roast poultry, prawns or a creamy soft cheese.
