Domaine Paul Pillot Chassagne-Montrachet 1er Cru Clos Saint-Jean 2023

Domaine Paul Pillot Chassagne-Montrachet 1er Cru Clos Saint-Jean comes from a walled parcel in the heart of the original clos, immediately beside the family cellars.

Clos Saint-Jean is one of the larger premiers crus of Chassagne-Montrachet, running up the slope above the village, and it is planted to both colours. The Pillot holding sits within the original walled section, so the vines are enclosed by the old stone boundary rather than simply carrying the name. The soils here are clay-rich, which is the main reason the whites from this part of the cru show more texture and weight than those from the stonier sites higher up, and the family’s oldest vines in the parcel are now beyond eighty years. Vinification follows the domaine’s standard practice for premier cru whites: pressing of whole bunches, fermentation and ageing in barrel with a modest proportion of new wood, and a long élevage on lees. This is a fine-boned release for the cru, yet it keeps the depth and power the site is known for, closing long and sappy.

Worth three to five years in the cellar and good for twelve. Serve at 10-12°C with roast pork, scallops in butter or a farmhouse Comté.
