Domaine Paul Pillot Chassagne-Montrachet 1er Cru Clos Saint-Jean Rouge comes from the heart of the walled vineyard next door to the family cellars.
Clos Saint-Jean is the benchmark terroir for red wine in Chassagne-Montrachet, and it produces outstanding quality in both colours. The Pillot parcel sits in the heart of the original Clos, the walled vineyard immediately beside the estate buildings, in the 2.2-hectare section traditionally called Chassagne du Clos Saint-Jean. The family owns just over a hectare here, split equally between Pinot Noir and Chardonnay, making them the largest owners in the Clos. This red was fermented with 50 per cent whole bunches, a high proportion that suits the site's natural structure and adds perfume and a fine tannic frame. Raised in Burgundian barrel without excess new oak, it is layered and firmly built, and it is not a wine that gives everything away in its first years.
Expect it to peak between ten and twenty years of age. Serve at 16-18°C with roast beef, game birds or a well-aged hard cheese.
