Domaine Paul Pillot Chassagne-Montrachet 1er Cru Clos Saint-Jean Rouge 2023

Clos Saint-Jean is the walled vineyard beside the Pillot cellars and the benchmark Premier Cru for red Chassagne-Montrachet.

Chassagne-Montrachet is now thought of as white wine country, but its Premiers Crus were long planted to Pinot Noir, and Clos Saint-Jean produces well in both colours. The Pillot parcel lies in the heart of the original clos, the 2.2-hectare section traditionally called Chassagne du Clos Saint-Jean. At just over a hectare, the family's holding is the largest in that section and is split evenly between Pinot Noir and Chardonnay. The vines are worked by hand, including tressage, where the shoots are arched over rather than hedged. This cuvée was fermented with a high proportion of whole bunches and pigéage was done by foot over about ten days, which gives a perfumed, finely structured red rather than a broad one.

Drink from now to fifteen years. Serve at 16 to 18°C with roast duck, veal or aged comté.
