Domaine Paul Pillot Chassagne-Montrachet 1er Cru La Grande Montagne 2020

La Grande Montagne is a white from the high, stony premier cru ground above Chassagne-Montrachet, and one of the tauter wines in the Pillot range.

The Chassagne slope runs from roughly 220 to 325 metres on limestone and stony soils that turn marly or sandier in places, and La Grande Montagne names its upper, south-facing reaches, where thin ground and altitude give whites with tension and length rather than early flesh. Domaine Paul Pillot is a fourth-generation family estate in the village, founded in the nineteenth century by Jean-Baptiste Pillot and now run by Chrystelle and Thierry Pillot, who took over from their father in 2005 and 2007; Thierry's changes from 2011 mark the beginning of the domaine's present form. They farm about thirteen hectares across some seventeen appellations, most of it in Chassagne, organically but without certification, hand-picking the premier and grand cru parcels and training the vines high to widen the leaf canopy. In the cellar the approach is deliberately quiet: eighteen months on lees in mostly larger 350- to 500-litre barrels with a low proportion of new oak, then six months in stainless steel before bottling.

Worth three to five years in bottle and good for a decade. Serve at 10-12°C with roast chicken, scallops or a hard alpine cheese.
