Domaine Paul Pillot Chassagne-Montrachet 1er Cru La Grande Montagne is a white from the high, stony premier cru ground above the village.
La Grande Montagne is the name given to the upper reaches of the Chassagne slope, a cluster of premier cru climats on thin, rocky, limestone-rich soil at altitude, which typically produce whites with tension and length rather than early flesh. Paul Pillot, based in the village and run by Thierry and Chrystelle Pillot, is among the domaines most closely associated with this part of Chassagne. The house approach is consistent across the range: hand-picking, whole-bunch pressing, fermentation on indigenous yeasts and unhurried lees ageing in older barrels.
Worth three to five years in bottle and good for a decade. Serve at 10-12°C with roast chicken, scallops or a hard alpine cheese.
