Domaine Paul Pillot Chassagne-Montrachet 1er Cru La Romanée 2019

La Romanée is widely considered the finest premier cru in Chassagne-Montrachet, and the Pillot vines sit at the very top of it.

The vineyard lies high on the slope in a sunny position that sees little wind, and local lore holds that the Romans planted the first vines here. Where the Pillot rows run the ground is very rocky indeed, with next to no topsoil over limestone. Thierry Pillot's grandfather planted these 0.49 hectares more than seventy years ago. Struggling vines, altitude and a warm aspect together deliver both deep minerality and concentration, a combination normally reserved for grand cru sites. This part of La Romanée is often the last vineyard in Chassagne to be picked. The wine is handled like the rest of the premiers crus: whole-bunch pressed, fermented with wild yeasts and matured on lees in barrel.

Best from about five years and capable of much longer ageing; serve at 10-12°C with lobster, veal in cream or an aged hard cheese.
