Description

Les Caillerets takes its name from caillou, the old French word for stone, and the Pillot family works four small parcels across the premier cru.

Caillerets is one of the best-known premiers crus of Chassagne-Montrachet, sitting mid-slope on very stony, limestone-rich ground. The Pillot holdings total 0.49 hectares and the vines average 55 years of age. Winemaking follows the same line as the domaine's other premiers crus, with hand harvesting, whole-bunch pressing, natural fermentation and ageing on lees in barrel; in some seasons no new oak is used at all. The stony soil shows in the glass as an intense, chalky and earthy minerality alongside real textural power, a combination that is uncommon even among premier cru whites. It is one of the more structured wines in the range and needs a little time to unwind.

Give it three to five years and expect it to hold for a decade; serve at 10-12°C with lobster, roast veal or a mature Comté.
