Description

Les Caillerets is one of Chassagne-Montrachet's best-known premiers crus, and Paul Pillot farms four small parcels there totalling 0.49 hectares.

The name comes from caillou, the French for pebble, and the ground is exactly that: stony, free-draining and shallow, which is the usual explanation for the depth and mineral cut the site delivers year after year. The Pillot vines average 55 years of age, spread across four plots within the vineyard. Vinification follows the same line as the domaine's other premiers crus, and no new oak was used for this release, so the wood plays no visible part. The wine carries considerable lift in the aromatics, with floral and citrus-peel character, before a generous, rocky palate. The chalky, earthy depth here is unusual among premier cru whites and is what gives the wine its reputation as a near grand cru.

Give it three to five years and expect it to hold for a decade; serve at 10-12°C with scallops, roast chicken or a firm mountain cheese.
