Domaine Paul Pillot Chassagne-Montrachet 1er Cru Les Caillerets 2023

Domaine Paul Pillot Chassagne-Montrachet 1er Cru Les Caillerets is drawn from four small family parcels totalling 0.49 hectares in one of the village’s most celebrated premiers crus, and saw no new oak in this release.

Les Caillerets lies on the Santenay side of Chassagne-Montrachet, high on a steep, stony slope; caillou is the French word for pebble, and the name is a fair description of the ground. The Pillot family, based in Chassagne itself, has long been associated with the site and works vines averaging fifty-five years across its four plots. Winemaking is identical to that of the domaine’s other premiers crus, with whole-bunch pressing, barrel fermentation and ageing on lees, and in this instance the barrels were all used rather than new. The wine that follows has marked aromatic lift, running to florals and mixed citrus peel, over a rocky, generous palate. Its defining quality is the depth and the chalky, almost earthy mineral grip, which is uncommon even among premier cru whites.

Give it three to five years and expect it to run for a decade or more. Serve at 10-12°C with roast chicken, grilled crayfish or a mushroom and Gruyère tart.
