Domaine Paul Pillot Chassagne-Montrachet 1er Cru Les Champs-Gains 2022

Les Champs-Gains is a Chassagne-Montrachet premier cru on a gentle slope close to the village, where Paul Pillot farms 0.38 hectares.

The vineyard lies just below Les Caillerets, and Thierry Pillot notes it is markedly less stony than his parcel in Les Mazures, with a deeper clay profile beneath the vines. That depth of soil, together with vines around 45 years old, gives the wine genuine flesh and texture, which is why he consistently picks early here to hold the tension in place. In the cellar the treatment matches the rest of the domaine's premiers crus, with restrained use of new oak and enough time on lees to fill out the middle. The result balances the broader, fruit-driven side of Chassagne with the freshness and mineral drive that keep the finish clean.

Ready after two years and holding for eight to ten; serve at 10-12°C with roast chicken, seared scallops or a gruyère-style cheese.
