Description
Les Grandes Ruchottes is a tiny 2.13-hectare premier cru between La Romanée and En Cailleret, on roughly the same line as Le Montrachet.
The site lies at around 260 metres above sea level, faces southeast and rests on marly, limestone-rich soil. Pillot farms 0.26 hectares at the very top of the hill, where the topsoil is so thin that much of the land cannot be planted at all. Few growers work here, with Ramonet holding more than half the vineyard, which is why the name is less familiar than its quality warrants. Winemaking is as for the other premiers crus: hand-picking, whole-bunch pressing, natural fermentation and lees ageing in barrel with restrained new oak. Altitude and rock give great finesse and purity, bright citrus and white florals, a firm raciness, and the smoky, matchstick reductive character typical of the site.
Three to five years will do it good and it will keep longer; serve at 10-12°C with oysters, grilled langoustine or delicate white fish.
