Domaine Paul Pillot Chassagne-Montrachet Les Mazures comes from a single 0.63-hectare village parcel lying directly beneath the premier cru Les Champs Gains.

Chassagne-Montrachet's village vineyards vary enormously, and the ones high on the slope under the premier crus are a different proposition from those on the flat. Les Mazures is one of the finest of them: rocky, limestone-rich soils with a south-east aspect, sitting just below Les Champs Gains, which goes some way to explaining the class and breed the site delivers. Thierry and Chrystelle Pillot farm a single 0.63-hectare block here. As with all the domaine's whites, the fruit is hand-picked and whole-bunch pressed, fermented on indigenous yeasts and raised on lees in a combination of tank and older barrels without stirring, an approach that keeps the wine textural and taut rather than broad. Chassagne at this level has become one of the more reliable buys in white Burgundy.

Best between three and eight years from the vintage. Serve at 10-12°C with roast chicken, grilled crayfish or a young comté.
