Domaine Paul Pillot Chassagne-Montrachet Les Mazures 2022

Les Mazures is a village Chassagne-Montrachet from a single lieu-dit lying directly below the premier cru Champs Gains.

Chassagne-Montrachet sits at the southern end of the Côte de Beaune and is best known for whites of weight and mineral drive. Domaine Paul Pillot has been in the village since the middle of the nineteenth century, when Jean-Baptiste Pillot moved from barrel-making into vines; his sons Alphonse and Henri extended the holdings and began bottling, Paul took over in 1968 and added the premiers crus, and the estate is now run by his children Thierry, who joined in 1999 and took charge in 2007, and Chrystelle. They farm around thirteen hectares organically without seeking certification, and the premier and grand cru parcels are worked by hand. Les Mazures faces south-east at roughly 235 metres on clay and limestone, with vines of more than twenty-five years. It ferments on indigenous yeasts and is raised twelve months in 350-litre barrels, about a tenth of them new, then given six months in tank before bottling - part of the longer, less oaky élevage Thierry introduced from 2011.

Approachable from release and good for five or six years; serve at 10-12°C with grilled white fish, roast chicken or a soft goat's cheese.
