Domaine Paul Pillot Chassagne-Montrachet Vieilles Vignes Rouge 2019

This is an old-vine red from a single parcel of Chassagne-Montrachet on the red clays of Les Grandes Terres, on the Santenay side of the village.

Chassagne-Montrachet is far better known for white wine, yet a substantial share of the appellation is still planted to Pinot Noir, and the clay-rich sites towards Santenay have long produced the village's finest reds. Pillot farms a 0.94-hectare parcel in Les Grandes Terres, where vines of more than fifty years give small crops of concentrated fruit. Harvesting is by hand. Around 30 per cent of the bunches go into the fermenter whole, which lifts the perfume and adds a layer of fine tannin, and the wine is raised in barrel with a light hand on new oak. The style is layered and complex, in the silky register this clay soil is known for, and it drinks well young without being simple.

Enjoyable now and worth several years in the cellar; serve at 16-18°C with roast poultry, beef bourguignon or a soft washed-rind cheese.
