Description

This old-vine Chassagne-Montrachet rouge comes from a single 0.94-hectare parcel of Pinot Noir on the red clays of Les Grandes Terres.

Chassagne is far better known for its whites, but the village has a long red history, and the clay-rich ground on the Santenay side has always produced the silkiest examples. Domaine Paul Pillot, run by Thierry and Chrystelle Pillot from the village itself, holds this plot of vines now more than 50 years old and treats the wine as seriously as any of its whites. Half the bunches were kept whole in the ferment, which lifts the perfume and gives finer-grained tannin, and the ageing is restrained so the fruit and the site's texture stay in the foreground. The result is a floral, red- and blue-fruited Chassagne with the supple frame that the Grandes Terres clays are known for.

Already open and drinking well, with five to eight years ahead of it; serve at 16-18°C with roast duck, grilled pork or a mushroom risotto.
