Description

Domaine Paul Pillot Chassagne-Montrachet Vieilles Vignes Rouge comes from a single parcel of fifty-year-old Pinot Noir on the red clays of Les Grandes Terres.

Chassagne-Montrachet is famous for white wine, but it was a red village before phylloxera and a small amount of Pinot Noir is still grown on the heavier, redder soils, particularly at the Santenay end. Domaine Paul Pillot, run by Thierry Pillot and his sister Chrystelle, farms a 0.94-hectare parcel of Les Grandes Terres on exactly that ground. The clay-rich soil there has long produced some of the silkiest reds in the commune. The vines are more than fifty years old. Around half the fruit goes into the fermenter as whole bunches, which brings perfume and a finer tannin structure, and the wine is raised in barrel without heavy new oak. It is a floral, red-fruited style of Burgundy rather than a dense one, and a reminder of what the village used to be known for.

Drinking now and worth cellaring six to eight years. Serve at 16-18°C with roast duck, mushroom risotto or a soft-rind cheese.
