Domaine Paul Pillot Saint-Aubin 1er Cru Les Charmois is grown on the Chassagne side of the village, on the same hillside that runs up to 1er Cru Chaumées.
Saint-Aubin lies in a side valley behind Chassagne-Montrachet and Puligny-Montrachet, and its cool, limestone-rich slopes have become one of the Côte de Beaune's most reliable sources of white Burgundy. Both of Paul Pillot's Saint-Aubin vineyards sit on the east-facing hillside bordering Chassagne 1er Cru Chaumées, effectively the end of the Chassagne slope rather than the main body of Saint-Aubin, which lies across a small valley behind En Remilly. Les Charmois is the higher of the two Pillot sites, above Les Pitangerets, and although limestone is never far away the soils here run a little deeper. That, along with a more westerly exposure, tends to produce a riper and more generous wine than the domaine's Pitangerets. The family farms just over a hectare of vines more than fifty years old, and the wine is raised with only 10% new oak.
Dense for Saint-Aubin but racy on the finish, it drinks well from release and will hold six to eight years; match it with roast pork, scallops or gruyère and serve at 10-12°C.
