Domaine Paul Pillot Saint-Aubin 1er Cru Les Pitangerets 2023

Les Pitangerets is the stonier of Paul Pillot's two Saint-Aubin Premiers Crus and the one that gives the firmer, more savoury wine.

Saint-Aubin lies in the valley behind Chassagne-Montrachet and Puligny-Montrachet, and its Premiers Crus have long offered white Burgundy of Côte de Beaune character at a more approachable level. Pitangerets has slightly poorer and stonier soils than the neighbouring Charmois, and typically produces firmer, more savoury wines, though the gap between the two narrows in warmer seasons. Some growers label the wine under the easier-to-pronounce climat name of Les Combes. Pillot farms half a hectare here, with vines approaching their sixtieth harvest. The domaine's method is consistent across the range: hand-picking, natural fermentation, ageing on lees in barrel with restrained new oak. The wine starts rich and then tightens as it crosses the palate, with sappy freshness and drive to match its generosity.

Best with three to eight years in bottle. Serve at 10 to 12°C with roast fish, veal or a hard alpine cheese.
