Domaine Paul Pillot Santenay Vieilles Vignes 2022

Paul Pillot's Santenay Vieilles Vignes comes from two old parcels on the Chassagne side of the village.

Santenay sits at the southern end of the Côte de Beaune and has long been a source of firm, savoury Pinot Noir at fair prices. Domaine Paul Pillot is based in Chassagne-Montrachet, where Thierry and Chrystelle Pillot are best known for their whites, and their red holdings are small and closely worked. The fruit for this wine comes from Les Champs Claudes and Les Parons-Dessus, two plots that lie near the domaine's Bourgogne vines on the boundary with Chassagne. The vines are around 50 years old. About 20% of the bunches were kept whole in the ferment, adding spice and a firmer aromatic frame, and the wine was aged only in large-format neutral oak, so the emphasis falls on perfume and structure rather than any imprint from wood.

Approachable within a year or two and good for up to a decade; serve at 16-18°C with roast duck, grilled lamb or a mushroom tart.
