Domaine Pavelot Corton Grand Cru Blanc 2024

Domaine Pavelot Corton Grand Cru Blanc is a full-bodied grand cru Chardonnay from the hill above Aloxe-Corton.

Most of that great hill is planted to Pinot Noir; Chardonnay takes only a small share, on the upper slopes where the limestone soil is palest and thinnest, which makes white Corton rare. The family, based in Savigny-lès-Beaune for generations, made its name with precise, structured premiers crus from its home village. Here yields are low, and the fruit is hand-harvested and sorted, whole-bunch pressed and barrel-fermented on wild yeasts, then kept on lees for close to a year with restrained new oak.

Broad and firm, with depth and a long, mineral close that needs time: five years or more in the cellar is best. Serve at 12–13°C with lobster, veal, poultry in a cream sauce or hard mountain cheese.
