Domaine Pavelot Savigny-les-Beaune 1er Cru 'Aux Guettes' 2023

Domaine Pavelot Savigny-lès-Beaune 1er Cru 'Aux Guettes' is drawn from a steep, south-facing premier cru high above the village.

The parcel runs to just under a hectare and a half at three hundred metres, on shallow limestone that keeps crops small and concentration high. Vines there average thirty-five years, and the whole estate is certified organic, with controlled grass cover and hard pruning. Fruit is destemmed, fermented with wild yeasts, then aged about a year in French oak of which roughly a quarter is new.

Expect dark cherry and wild strawberry dusted with stone and spice, held together by firm but polished tannin. An hour in a decanter helps; serve at 16 degrees with duck, roast pork or a wedge of aged Comté.
