Domaine Pavelot Savigny-les-Beaune 1er Cru 'La Dominode' 1.5L MAGNUM 2023

Domaine Pavelot Savigny-lès-Beaune 1er Cru 'La Dominode' is the most serious red the domaine makes in its home village.

Just over two hectares lie on a moderate east-facing slope of sand and clay, a site whose name traces back to the Latin dominus and the old lord of Savigny. Close to half the planting dates from the 1930s, and about thirty per cent of the crop goes into the vat as whole bunches before a slow, wild fermentation and ten to twelve months in French oak. Bottled in magnum, the wine ages more slowly again.

Depth is the point here: black cherry, iron, dried herbs and a long mineral close, with tannin that asks for patience. Cellar it a few years, then pour at 16 degrees with rare beef, venison or a slow-cooked shoulder of lamb.
