Domaine Pavelot Savigny-les-Beaune 2023

Domaine Pavelot Savigny-lès-Beaune is the everyday red of a family that has worked these slopes for five generations.

Thirteen hectares sit around the village on the Côte de Beaune, farmed organically with grass between the rows and strict pruning to hold yields down. Fruit for this cuvée comes from roughly six and a half hectares of Pinot Noir averaging fifty years of age, one parcel sitting right beside the Aux Guettes premier cru. The bunches are destemmed, fermented on ambient yeasts over a fortnight and raised ten to twelve months in used barrels.

Red cherry and raspberry lead, with a savoury, faintly earthy edge and fine chalky tannin behind them. Pour it at 15 degrees and put it beside roast chicken, mushroom risotto or a board of charcuterie.
