Domaine Pavelot Savigny-lès-Beaune Blanc 2023

Domaine Pavelot Savigny-lès-Beaune Blanc is a dry, village-level Chardonnay from a Côte de Beaune commune better known for red wine.

Tucked into a side valley behind the hill of Corton, Savigny splits between lighter, stonier slopes on the Pernand side and deeper soils facing Beaune. White is made here in small amounts. Hugues Pavelot now runs the family domaine from cellars in the village. Hand-picked fruit is whole-bunch pressed, fermented with wild yeasts and aged in French barrels for about a year on lees, with only a little new wood, in a direct, unshowy house style.

Quietly textured and dry, with a fine thread of acidity. Try it at 11–13°C with roast chicken, pork loin, white fish in butter or soft washed-rind cheese.
