Domaine Pichot Clos St Mathurin Vouvray Brut 2023

Pichot Clos St Mathurin is a single site traditional method sparkling Vouvray from pure Chenin Blanc, bottled with zero dosage.

Vouvray sits on the right bank of the Loire just east of Tours, on tuffeau limestone capped with flinty clay, and Chenin Blanc is the only permitted grape. Sparkling Vouvray accounts for a large share of the appellation's output and must be made by the traditional method with second fermentation in bottle. Pichot farms in Vouvray and works organically, picking for the balance between ripeness and the naturally high acidity that Chenin retains on these soils. This cuvee is finished with zero dosage, so no sugar is added at disgorgement and the wine is left entirely dry, relying on fruit ripeness and lees ageing for its shape. Clos St Mathurin is the named parcel bottling in the range.

Fine boned and bone dry, it is best with shellfish, smoked fish and fresh chevre, or simply as an apertif; serve chilled at around 8 degrees.
