Pichot Vouvray Coteau de la Biche is a near-dry Chenin Blanc from the hillside site the domaine takes its reputation from.

Domaine Pichot farms on the first coteau of Vouvray, the slope that rises behind the Loire east of Tours, where a shallow layer of clay and flint sits over the tuffeau limestone the cellars are dug into. The estate is farmed bio-dynamically, with ploughing between the rows in place of herbicide and hand work through the growing season. Coteau de la Biche is its benchmark cuvée, fermented and raised without heavy intervention and bottled at five grams of residual sugar, a trace that rounds off the appellation's acidity rather than making the wine taste sweet. It is sealed under a stelvin-luxe screwcap, which suits a wine intended to be drunk fresh as much as cellared.

Dry in effect and brisk; serve at around 10 degrees as an aperitif or with goat's cheese, oysters and lighter fish.
