Domaine Pichot Vouvray trie de grains nobles Les Larmes de Bacchus is a botrytised sweet Chenin Blanc picked berry by berry on the premier coteau of Vouvray.
The Chenin Blanc for this wine grows on a single hectare of old, closely planted vines on Vouvray's premier coteau, just above the village, where a thin covering of clay and flint lies over tuffeau limestone. Only berries fully affected by noble rot are taken, gathered by hand across seven or more successive pickings, so that the whole parcel yields one or two hectolitres per hectare. Fermentation is slow and stops of its own accord, here leaving 170 grams per litre of residual sugar. Domaine Pichot has bottled the cuvee in only six vintages, and releases it after long ageing in the tuffeau cellars beneath the village rather than sending it out young.
Rich and honeyed but cut by Chenin Blanc's acidity, it is a match for foie gras, mature blue cheese or simply a glass on its own after dinner; serve at around 10 degrees.
