Domaine Pichot Vouvray trie de grains nobles Les Larmes de Bacchus 2011

Domaine Pichot Vouvray trie de grains nobles Les Larmes de Bacchus is an intensely sweet botrytised Chenin Blanc made in only six vintages in the estate's history.

Les Larmes de Bacchus comes from a single hectare of old, high-density vines on the premier coteau of Vouvray, on the slope immediately above the village, where clay and flint sit over tuffeau limestone. In years when botrytis settles cleanly on the Chenin Blanc, individual shrivelled berries are picked out by hand over seven or more separate passes through the vineyard, a trie de grains nobles in the strictest sense. Yields fall to one or two hectolitres per hectare, which is why the wine appears so rarely. This bottling finished with 298 grams per litre of residual sugar, a concentration closer to essence than to conventional dessert wine, held in balance by Chenin Blanc's naturally high acidity.

Extraordinarily concentrated and best poured in very small measures, it works with Roquefort or foie gras but is really a wine to drink on its own; serve at around 10 degrees.
