Domaine Pierre Labet Bourgogne Chardonnay Vieilles Vignes is a white Burgundy made from the domaine's older plantings under the region's broadest appellation.
The regional Bourgogne appellation covers the whole of Burgundy, and because it demands so little it is the classification where the identity of the grower counts for almost everything. Domaine Pierre Labet is based in Beaune and is run by Francois Labet, who also directs Chateau de la Tour in the Clos de Vougeot; the domaine carries his father's name. The vineyards are farmed organically. Vieilles vignes means old vines, a phrase with no legal definition in France but a real effect in the glass, since older plants carry smaller crops, root more deeply and cope better with hot or dry seasons. The fruit is whole-bunch pressed, fermented in barrel and left on its lees, with new oak kept to a minimum so the wine stays direct.
An easy white for roast chicken, fish, quiche or goat's cheese, best served at about 11 degrees.
