Domaine Plageoles Gaillac Mauzac Nature Sparkling 1.5L MAGNUM 2020

Domaine Plageoles Gaillac Mauzac Nature Sparkling, in magnum, is an organic méthode ancestrale made from the rare Mauzac Rose.

Gaillac in the South West has been making sparkling wine by the ancestral method since the 1500s, long before Champagne turned to bubbles, and for a time méthode gaillacoise was a widely used synonym for the technique. These wines are the ancestors of today's pét-nats, and the Plageoles Mauzac Nature is the reference example. The fruit comes from a forty-year-old organically farmed parcel of Mauzac Rose, an exceptionally rare strain of the local variety. The naturally fermented base wine is chilled to arrest fermentation while 25 to 30 grams per litre of sugar remain; the following spring it is bottled and the fermentation resumes under cork to create the bubbles. Nothing else is added and no dosage is needed, as the second fermentation stops naturally with a touch of sugar left. There is no disgorgement, so expect a slight cloudiness.

Drink young and cold, at around 8°C, with charcuterie, fried chicken or a wedge of tarte aux pommes.
